Maple Poached Pineapple
The combination of maple syrup with the tangy taste of pineapple can satisfy any sweet tooth. This dessert is lowfat, low cholestrol and low sodium. If plain vegan yogurt is substituted for the plain lowfat yogurt the dessert becomes vegan.
1/2 cup plain lowfat yogurt
1/4 cup pure maple syrup, more for serving
1 lb pineapple chunks
Put maple syrup in a heavy non-reactive saucepan over medium high heat. Bring to a boil. Add pineapple and simmer 2 minutes. Stir and simmer another 2-3 minutes or until pineapple is tender. Serve poached pineapple with maple syrup and yogurt.
