Cranberry Relish Salad

This is a perfect salad to serve with your holiday meals. It is delicious, colorful, low in fat and in sodium. Great for vegans and vegetarians.

Ingredients:

1 cup sugar

2 oranges, peeled and segmented

2 tsp orange zest, minced

2 tart apples, peeled, cored

2 cups cranberries, coarsely chopped

1/2 lb seedless grapes, halved

1 lb unsweetened pineapple chunks

Directions:

Combine all ingredients in a bowl. Cover and chill until ready to serve.

Serves 8
