Lentil Soup

Lentil soup has always been a savory dish. This savory lentil soup is vegan, vegetarian, low fat, low calorie, and low cholesterol.

Ingredients:

1/4 cup ketchup

1/2 tsp curry powder

4 cups water

1 tsp oil

1 cup dried lentils, rinsed and drained

3 carrots, peeled and shredded

3 tbsp celery, thinly sliced

Directions:

Combine lentils and water in a heavy saucepan over medium high heat. Bring to a boil. Reduce heat to medium low. Skim off any foam that may appear at the top. Add remaining ingredients. Simmer 40-45 minutes or until lentils are tender. Season with salt to taste.
