Mediterranean Bean Salad

The mediterranean diet has been shown to be a very healthy one.  This recipe has a great flavor but only four percent fat.

Ingredients:

10 oz mixed baby greens

15 1/2 oz canned cannellini beans, rinsed, drained

10 medium cherry tomatoes, halved

1/2 cup diced red onion

1/2 tsp olive oil

I Tbs Dijon mustard

2 Tbs lemon juice

2 Tbs fresh tarragon, minced

2 medium garlic cloves, minced

1/4 tsp table salt

Directions:

In a large bowl, combine greens, beans, tomatoes and onion.

In a separate bowl, whisk together remaining ingredients for dressing.

Pour over salad and toss well before serving.

Serves 4
