Tri-Color Mediterranean Salsa

Excellent as a topping over grilled vegetables or as a dip for pita bread triangles.

Ingredients:

½ tsp olive oil

1 cup diced green bell pepper

1 cup diced red bell pepper

1 cup diced yellow bell pepper

2 Tbs capers

1 garlic clove, minced

3 Tbs finely chopped fresh basil

2 Tbs lemon juice

½ tsp dried thyme

¼ tsp chopped fresh rosemary

Directions:

Heat oil in a large skillet. Add peppers, capers and garlic; sauté until tender. Remove from heat; stir in basil and lemon juice. Before serving add thyme.
