Nutty Cranberry Salad

A low cholesterol and sodium vegetarian salad that is just delicious during the hot days of summer.

Ingredients:

1/4 tsp ground cloves

6 oz red flavored gelatin

1/4 tsp salt

1/4 tsp ground cinnamon

1-1/2 cups boiling water

2 cups whole berry canned cranberry sauce

2 tbsp orange rind

2/3 cup chopped walnuts

2 Golden Delicious apples, chopped

 

Directions:

Dissolve first 4 ingredients in boiling water. Stir in cranberry sauce and orange rind. Chill until it just begins to thicken. Fold in apple and nuts. Pour into mold or 9 in. baking dish. Chill about 3 hours, or until firm.
